School ended on Thursday, so I started my Christmas baking this weekend which surprised even me. I haven’t had this kind of time on my hands since Christmas of 2007! Two weeks away seems so early to be making Christmas cookies, but I have an ambitus list this year and can’t wait until the last minute. My mother-in-law isn’t out here this holiday to do my Christmas baking, so I’m going to have to do it all myself.
The cookies I started with were not on the Christmas cookie list (yes, there is an official list posted on the fridge, it also details all the other things I need to get done for Christmas). I had been clearing out the freezer to make room for all the upcoming cookies and found a plastic baggie of frozen egg whites. This reminded me about Julie’s Chocolava cookie recipe I’d seen a while ago. The cookies look so festive and since I didn’t have a chocolate cookie on the list I figured why not?
I made a triple batch (because I had 8 frozen egg whites) which made about 65 cookies. They are very easy to make and I didn’t find them any messier than other cookies I’ve made. I baked mine for about 10 minutes and they were perfectly chewy – I will be adding the recipe to my collection for next year. I couldn’t find anything about freezing them but I put mine in the freezer anyways. We’ll find out in a couple of weeks if they aren’t freezer friendly!
