Oatmeal Breakfast Squares

Today was my first presentation at school and tomorrow is my first day of practicum. I’ve got readings, writings and thinkings to do. It’s keeping me busy. But not too busy, let’s not get carried away. I’m sure I’ll be too busy at some point, but that’s not right now. Right now I’m just busy, and that allows me a little time for other things besides school.

Tomorrow being a rather big day, I thought I should start it off with something delicious but filling, since I’m not sure what my eating schedule will be like. I saw this recipe, which lead to this recipe and finally to this recipe, which didn’t need to soak overnight. Soaking overnight works with my schedule, baking things tomorrow before leaving the house at 7:30 doesn’t.

I didn’t want rhubarb, so I played with the recipe a bit. I cut out the rhubarb, but left the full amount of sugar since my applesauce is a bit sour. I added some cinnamon and cloves to go with the apple flavour, and a handful of dried blueberries because they were hanging around. I didn’t have any ground flaxseed, but I put in a 1/4 cup of toasted sesame seeds instead.

I ate a little bit of dessert tonight, and the squares are quite tasty. Not too sweet, but good with a little maple syrup and milk. I’m looking forward to breakfast tomorrow (and the rest of my day too)!
