Sweet Potato Fries

We went for our first post marathon run (stiff, but not too bad) and made sweet potato fries (delicious) this weekend. Apparently, sweet potatoes are better for you than the old regular potatoes, and it’s always fun to cook with some thing a little bit different from the normal.

We tried this sweet potato fries recipe, which was quite a nice spice mixture. I didn’t have any ground fennel, but the magic bullet changed the fennel seeds into ground fennel. And I used 1 tsp of cayenne pepper, which I thought was the right amount of spice but Jonny thought it was a little bit too much. I ended up using a bit more of the spice mixture and olive oil than the recipe called for, but maybe my sweet potatoes were larger than average (I did let Jonny pick them out after all).

The fries were the perfect accompaniment for home-made chicken fingers. If you don’t already own a copy of Make It Tonight, you should run to the nearest book store and buy a copy. It is probably one of my most used cook books, and it never requires fancy ingredients or a lot of prep time. It’s the perfect weeknight cook book. And it has a recipe for home-made chicken fingers! Delicious!
